This coffee comes to us from the FederaciĆ³n de Sociedades Cooperativas Cafetaleras de la Sierra Madre FC de RL (FEDSI) located in Chiapas, Mexico. FEDESI is a federation of 6 small coffee groups located throughout many municipalities in Chiapas. This group was formed to improve their access to new market productions, financing, and government support. Many of the FEDESI coffee groups are small producers with about 3 acres of land each. Each group has its own operating wet mill and patio where they dry their coffee. Together, they have a certified volume of 32,000 bags of fair trade organic coffee per year.
Surrounded by the Sierra Madre mountains, this coffee was grown at high altitudes (1000-1900m above sea level) which contributed to the complex flavors that you will taste in your cup. After the cherries are hand-picked, they are transported to the mill where they are sorted, weighted, pulped, washed, and dried.
